OK, here is a modified Russian cold soup Okroshka [modified because the original calls for a disagreable fermented base].
Chop up green onions and whichever herbs you like [original version called for dill and parsley]
pour coarse salt over chopped up herbs and green onions and mash them with a big spoon till they release green juice. [this step optional]
chop up boiled peeled potatoes, hard boiled eggs, any cold meats you like – salami, for example- or even lox; dice fresh cucumbers, shred some fresh radishes. I guess you take about equal amounts of everything, but it is really what you like and have more of.
Mix it all with green onions and herbs in a large bowl.
Pour some no-fat drinkable “keffir” (sold in organic and specilaty section of the supremarket; it’s like yogurt only it is not thickened) to make the whole mess soupy. It’s basically a salad floating in keffir. I bet it could be also made with something else as long as it is liquidy and sourish (I don’t know, margaritas maybe?) It sounds odd, but it is quite tasty. If you use margaritas or other such soup base, add sour cream and don’t operate heavy machinery.

Nothing says summer like watermelon! Fresh juice made with watermelon, pineapple, and ginger root. So good, so refreshing, so healthy, and so easy to make. Not to mention no need to heat up the house by turning on the stove or oven! :smileyhappy:

Just have to say anything that is b-b-q’d. There is just something about that charcoal and smokey flavor, ‘nough said.

My Moms cucumber onion salad. So easy and good! The way she made it and I still make it this way is:
Slice up cucumber with or without the peel, slice up an onion, put tbsp or 2 of mayo ( I acutally prefer “salad dressing” a bit sweeter than mayo), pepper to taste. Let sit in fridge for at least 30 min.
Then scarf it down!

I forgot. My husband and I enjoy soup all year round. During the sum mer I put tomatoes, cucumbers, summer squash, onions and pepper into a blender and puree. Add one or two chili peppers along with spices and there you go. Refrigerate.Of course when we are lazy a trip to Trader Joe’s comes in handy. They make their own and it’s quite delicious.

We have a market that cuts up fresh vegetables (summer squash baby carrots, broccoli, cauliflower, zuccinni squash and mushroos) and sells it by the package. This saves me tons of time and therefore just clean the veggies and throw them into a wok. I add onions both Vidalia and scallion (with the greens)and a littlOlive Oil. To this I add shrimp, clams, Tilapia and sometimes salmon/lobster. Being in the Northeast at this time of year, so easy to pick up non farm fed fish. The whole dish takes about ten minutes and keeps our kitchen cool.

I love frozen grapes, lots of fresh salads, cucumber salad, watermelon balls very cold, almost all fruits and vegetables. Love black bean salad that my friend makes especially for me because she knows I don’t eat any meat.

Simple Simon when it goes to my favorirte Summer time recipe Hot Dogs and Hamburgers with Ketchup fried onions lettuce between two wheat buns and a cold glasses of Green tea or Root Beer:)

? hi, you are welcome to come by any time. but i have one problem with the pringles….they are good all year…not just summer!!! yum! i actually remember when they first hit the scene. :catsurprised: it was sometimes in the 70’s, if i remember correctly.:catwink: wow. anyway, take care

Pasta salad- Because it is easy & looks nice! Italian dressing, raw veggies, Salad Supreme ( in the spice aisle) parmesan cheese, black olives (if you like) & Wacky Mac spiraled pasta. Cook pasta, drain, add veggies, spice, dressing,parmesan cheese- done Finito!!!!!!

I love simple and easy recipes in the summertime.
Here’s my favorite:
Lift off plastic top from canister.
Remove foil liner.
Insert fingers into container to remove amount needed.
Pop Pringles into mouth and enjoy.

MY FAVORITE SUMMERTIME RECIPE IS SHRIMP LOUIS SALAD. THERE’S NO COOKING EXCEPT FOR THE BOILED EGGS. IT’S REFRESHING AND LIGHT.

4 BOILED EGGS SLICED (1 PER SERVING)
1 ENGLISH CUCUMBER SLICED
1 QUARTERED AVOCADO
28 MEDIUM TO LARGE COOKED SHRIMP (PRAWNS) 7 PER SERVING
1-2 SLICED LEMONS
1-2 QUARTERED TOMATOES OR GRAPE TOMATOES
