Hi Adam! My favorite summer time recipe is very simple: fresh sliced cucumbers and tomatoes from my garden w garlic vinaigrette drizzled on top. It is delightful!

hi adam, here is a great basic recipe that can be changed to suit each taste. my sister called it “cowboy cavier.” the basics are: canned black-eyed peas, canned black beans, (both rinsed) corn, ( i use left over roasted corn cut off the cob) cilantro, fresh lime juice, green onions, salt.
when i make this i add a little canola oil for body and i add green salsa. this can all be mixed to taste but the flavors have to marry for a while in the refrigerator. you can add fresh pressed garlic, hot sauce, more lime, less lime, chile, no cilantro, more cilantro, fresh chopped tomatoes. just use your imagination and add what you love :heart:. it’s just yummy and high in protein. it gets better overnight. it is eaten with tortilla chips or just as a side, especially with bbq. or tacos, etc. enjoy!:womanhappy:

frozen fruit + 1 yogurt + 1 ninja chopper = fresh, home made frozen yogurt!!!!!

GUACAMOLE… because it’s just plain Delicious and Nutritious. Perfect addition for breakfast, lunch, dinner, appetizers, parties, you name it. OLE!

My go-to favorite summer time recipe is the Pineapple Mojito. Why? Just because it is 5 o’clock somewhere. LOL! It’s refreshing and a treat for me!
Pineapple Mojito
10 fresh mint leaves (from my garden)
1/2 lime cut into wedges
1 cup ice cubes
1/1/2 oz white cane rum
2 slices of pineapple
2 Tbs sugar
1/2 cup club soda
4 Tbs pineapple juice
1. Muddle pineapple, lime, sugar and mint in cocktail shaker
2. Fill shaker with some ice and other ingredients
3. Shake well and strain into glass with fresh ice
4. Garnish with mint and/or pineapple wedge (I usually use both)
5. Kick back and enjoy!!:smileyhappy:

When it’s hot no one wants to be stuck in the kitchen.
I drink lots of melon drinks. Just plain melon into the Nutribullet w/ some ice.
If I’m feeling fancy I might toss in some mint or tarragon from the garden and/or some tumeric and ginger.
I also live on Insalada Caprese for a quick and beautiful bite.

hi adam, another nice summer recipe is fresh angle hair pasta, (it only takes three minutes to cook) tossed with chopped fresh basil, fresh tomatoes (seeded) from the garden, pine nuts, salt, and a little olive oil. it’s not actually a hot dish. it’s warm and delicious to eat while sitting outside.
when we have guests we like to serve them fresh bagels (I live in new york so they are awesome) for breakfast. i put fresh basil from the garden, cream cheese, and dash of sea salt in a food processor and make a nice “schmear.” it may sound heavy, but it’s really not. and it’s devine!

One of my favorite dinners is BLT’s with fresh tomatoes from my garden, fresh corn on the cob and a huge bowl of fresh fruit salad. It is super on a hot day and also lots of fresh summer time items you can only get in the summer! A little later in the summer I’ll add some kind of fresh squash from the garden. Just love my garden!!!

MY FAVORITE SUMMERTIME RECIPE IS SHRIMP LOUIS SALAD. THERE’S NO COOKING EXCEPT FOR THE BOILED EGGS. IT’S REFRESHING AND LIGHT.
SERVES 4
CHOPPED ROMAINE LETTUCE
4 BOILED EGGS SLICED (1 PER SERVING)
1 ENGLISH CUCUMBER SLICED
1 QUARTERED AVOCADO
28 MEDIUM TO LARGE COOKED SHRIMP (PRAWNS) 7 PER SERVING
1-2 SLICED LEMONS
1-2 QUARTERED TOMATOES OR GRAPE TOMATOES
CHOICE OF SALAD DRESSING
CHILLED CHARDONNAY WINE
BON APPETIT

I love simple and easy recipes in the summertime.
Here’s my favorite:
Lift off plastic top from canister.
Remove foil liner.
Insert fingers into container to remove amount needed.
Pop Pringles into mouth and enjoy.

I love crisp, fresh salads like Chicken Avocado Cobb with a vinaigrette dressing.

Pasta salad- Because it is easy & looks nice! Italian dressing, raw veggies, Salad Supreme ( in the spice aisle) parmesan cheese, black olives (if you like) & Wacky Mac spiraled pasta. Cook pasta, drain, add veggies, spice, dressing,parmesan cheese- done Finito!!!!!!

? hi, you are welcome to come by any time. but i have one problem with the pringles….they are good all year…not just summer!!! yum! i actually remember when they first hit the scene. :catsurprised: it was sometimes in the 70’s, if i remember correctly.:catwink: wow. anyway, take care
