Hello , I have owned the Phillips AirFryer for about 7 months and have tried many recipes and off the cuff seasonings. My successes have been to coat the food with dry spices of your choice, place them in the fryer and spray with cooking oil. I do have the shelf and recommend it to double the cooking portion and also (sometimes) allow meat drippings to season vegetables or potatoes on the lower shelf. I have loaded up both layers with chicken wings, stuffed mushrooms or jalapeno poppers for example and they cook crisply and evenly. Back to your question, season the potatoes and then spray each layer with cooking spray, olive oil, coconut oil etc. The oil will crisp the surface and seal in the seasonings. I love this appliance and can share one tip for cleaning. Over time some splatter may get stuck up in the heating coil and fan which can smoke. I wish I knew earlier to clean it after every couple of uses by adding 1 cup white vinegar and some water to the basin and cook on high for 15 minutes. Then wipe what you can reach with a wet paper towel. This will avoid the splatter build up. I hope this is helpful.
