We asked: What’s your favorite summer time recipe and why?
You answered: hi adam, here is a great basic recipe that can be changed to suit each taste. my sister called it “cowboy cavier.” the basics are: canned black-eyed peas, canned black beans, (both rinsed) corn, ( i use left over roasted corn cut off the cob) cilantro, fresh lime juice, green onions, salt.
when i make this i add a little canola oil for body and i add green salsa. this can all be mixed to taste but the flavors have to marry for a while in the refrigerator. you can add fresh pressed garlic, hot sauce, more lime, less lime, chile, no cilantro, more cilantro, fresh chopped tomatoes. just use your imagination and add what you love Heart. it’s just yummy and high in protein. it gets better overnight. it is eaten with tortilla chips or just as a side, especially with bbq. or tacos, etc. enjoy!Check your email on file for gift card details.

My favorite summertime recipe is fruit salad because it always brings back wonderful childhood memories. Growing up in a lakefront home, my mom would ask us kids to get the watermelon rope. You see, we tied a rope around the watermelon and put it in the lake. Fast and easy way to cool the watermelon. The rope prevented the watermelon from washing away. After the watermelon chilled in the lake for a few hours, we would eagerly run down to the shore to bring the cold watermelon back to my mom for slicing and dicing. Each child had an important job and added their fruit to the salad. If we behaved, my mom saved some of the watermelon seeds for a fun after dinner activity. Imagine a group of children (including neighborhood kids) sitting on the shoreline and dock having a watermelon seed spitting contest. Every time I take a bite of summertime fruit salad, I am hit by a delightful wave of nostalgia.

I love homemade ice cream any flavor with the handcranking, salt and other ingredients. It reminds me of the great time I spent with my grandparents as a child on their farm.

I have a lemon balm plant outside, and all i do is tear off a leaf and put It In a glass of ice tea in the summer. and then eat it. it has health benefits, and plus makes for a great breath freshener too! love it! perfect for summer. thanks!

Summertime Maryland Crabcakes! I grew up in California, where Pacific crab feasts are legendary and yummy. Now I live in the Mid-Atlantic and love softshell crab. My favorite summerfare is crabcakes. Best eaten with a beautiful salty ocean breeze and lemonade! Nothing says summer more than crabcakes at the seashore!
1 lb crabmeat, 1 cup cream, 1 cup fresh breadcrumbs, 1 teaspoon dry mustard, 1/2 teaspoon cayenne pepper, 2 teaspoons Worcestershire sauce, 3 drops Tabasco, 1 egg.
Combine ingredients well-make 8 patties. Roll in fine, dry bread crumbs. Fry in deep oil until golden brown.

My favorite is anything on the grill. Why you ask; because my hubby is master griller here which leaves me to relax. It also keeps the kitchen from heating up and the family loves grilling out. We seem to enjoy being together more and have alot of fun in the process and here in North Dakota we don’t have a lot of weather when we can grill so we try to take advantage of it. Winters here are cold and miserable and seem to come way to quickly.
And who doesn’t enjoy hotdogs and burgers in the summer?

Ooh summertime, and any fresh crisp cool salads are my favorite, , I love them all.
Tomatoe slices with mozarella and basil, a drizzle of olive oil, yum* So refreshing when it’s hot. Then nice cold melon and fruits. Perfect 🙂 Happy summer eating everyone. 🙂

Hi,Adam.Mine is a very easy recipe.:womanhappy:: I slice a home grown tomato,add a little salt and pepper to it.Then I get out my bread,put Duke’s mayo on it and 2 tomato slices.. Very easy and oh,it tastes good for lunch or a picnic..
.When I bite into it and that tomato juice runs down my chin,I feel like a kid again.:womanvery-happy:

My favorite summertime dish is Zucchini and tomatoes
Chop up some onions a handful or two
mince up a couple of garlic cloves
chop up some peppers either sweet bell peppers or hotter ones like jalapeno, anaheim etc
slice up some smallish zuchinni
chop up enough tomatoes to make about 2-3 cups or use 1 or 2 cans of tomatoes. The amount of tomatoes depends on how much of the other ingredients you use
Note I dont use measurements I just toss in what I have that day.
saute the onion peppers until softened add the garlic cook til fragant throw in the squash and cook a little longer. add the tomatoes and seasonings* let simmer until the squash is cooked
Seasonings
Salt & pepper to taste. A little bit of sugar can be thrown in to cut the acidity.
if using the bell peppers use basil, oregano etc I usually add some chili flakes for some pep
grated parmesan cheese can be sprinkled on top when serving
If using the hotter peppers I throw in a bit of cumin and some Mexican oregano. Use co jack , cheddar or monterey jack etc cheese when serving
You can serve over brown rice, noodles or just eat it with bread or tortillas. I like it hot or cold.
The vegetables are all things that I grow in my garden. I make a bigger amount and then I eat it for leftovers during the week.

i keep lots of fresh limes around all summer. i love the taste and smell of limes. a good squeeze of lime pairs well with with so much… seafood, tacos (the real ones, like in mexico) fresh fruit, iced tea, avacado, cucumbers, soda water, gin and tonic:cattongue:, it’s very refreshing. enjoy!
